This sushi restaurant is well known among seafood lovers who appreciate the unique taste of properly aged fish. Yaksu Sushi Restaurant Dan Sushi specializes in water-aging techniques, a process that carefully matures the fish to enhance its flavor and texture before it is served as sushi.

The restaurant has even been featured twice on the Korean TV program “SBS Live Today” between 2022 and 2023 under the keyword “aged sashimi,” which helped introduce the restaurant to a wider audience.

On a rainy day when I was craving aged sushi, I finally returned to Yaksu Sushi Restaurant Dan Sushi again.

Inside, the restaurant has a simple yet comfortable layout.

There are two main seating areas:

• tables for groups of four

• a sushi counter bar with about five seats

The counter seating is especially interesting because you can watch the chef prepare the sushi in front of you. Guests sitting here can see the process of slicing fish and assembling sushi almost like watching a scene from the famous manga “Oishinbo” or “Shota no Sushi.”

It’s also a great option for solo diners or casual drinks.

Yaksu Sushi Restaurant Dan Sushi already has many long-time regular customers, so making a reservation in advance is highly recommended.

Even when we arrived right at opening time, most tables were already reserved, and throughout the meal the phone kept ringing with takeout orders and reservation requests.

The Water-Aging Process

One of the most unique things about Yaksu Sushi Restaurant Dan Sushi is the water-aging system used to mature the fish.

While meat aging refrigerators have become common, seeing a dedicated system for aging fish in water was something I had never encountered before visiting this restaurant.

The fish undergoes a preparation method similar to the Tsumoto technique, and then it is aged underwater at an optimal temperature.

Watching the fish slowly mature inside the aging case makes the anticipation for the sushi even stronger. It also gives customers confidence in the quality and care that goes into each piece.

Menu at Yaksu Sushi Restaurant Dan Sushi

The menu at Yaksu Sushi Restaurant Dan Sushi is thoughtfully divided into lunch and dinner sections.

During lunch, the most popular choice is the lunch sushi set, which offers incredibly good value considering the quality of the aged fish used.

Lunch menu options include:

• assorted sushi set
• chirashi sushi
• eel rice bowl
• kaisendon (seafood rice bowl)
• udon

Dinner focuses more on leisurely dining, with aged sashimi courses, sushi sets, and even a solo drinking set, which many regulars enjoy with sake.

You can also order additional sushi pieces individually, and the restaurant offers a variety of alcoholic beverages.

For our visit, we chose the lunch sets. My friend ordered the Special Lunch Set, while I chose the Lunch Special Set.

The Food of Yaksu Sushi Restaurant Dan Sushi

Each table is thoughtfully prepared with containers of pickled ginger, pickled radish, and soy sauce, allowing guests to refill their plates easily.

The meal starts pleasantly with green tea served in a warm teapot, which already creates a calm sushi-restaurant atmosphere.

The lunch set includes more than just sushi. It also comes with:

• salad
• steamed egg custard
• tempura
• miso soup

Considering the price, the set already feels like excellent value.

The steamed egg custard was soft and savory, enhanced with the aroma of shiitake mushrooms.

While enjoying the salad and soup, a unique appetizer arrived: fresh cucumber slices served with barley soybean paste and stir-fried stem lettuce.

The seasoning used for the stem lettuce was especially memorable, creating a flavorful dish that worked perfectly as both an appetizer and a refreshing bite between sushi pieces.

Then finally, the highlight of the meal arrived — the lunch sushi sets.

Both sets contained 12 pieces of sushi, though the types of fish differed slightly.

One difference I noticed was a sushi topped with sea urchin and squid, which I happily chose since I love uni.

Another noticeable difference was the eel sushi, which appeared larger in the Special Lunch Set.

Overall, the Special Set included more red-meat fish varieties, but considering the price difference, the standard lunch special still felt like the best value.

Sushi Quality of Yaksu Sushi Restaurant Dan Sushi

The fish slices were impressively thick, and the cuts on the tuna pieces were beautifully done.

There was no fishy smell at all — just clean, rich flavors that showed the effect of the aging process.

The rice portion was relatively small compared to the generous thickness of the fish, which made each piece feel especially satisfying.

Because of the large pieces of fish, the meal becomes surprisingly filling even though the sushi count is standard.

One of my favorite pieces was a white fish sushi topped with perilla leaf and aged kimchi.

The combination created a surprisingly refreshing flavor that stood out as a memorable bite. Next time, I’m already planning to order that one as an extra piece.

The tempura served with the set was also excellent — crispy outside and tender inside — though by the time it arrived I was already quite full from the sushi.
