If you are a fan of Korean beef intestines (gopchang), you are in for a treat! I recently discovered Dalsoone Gopchang in Sinsa-dong, a place that serves the freshest, chewiest, and most flavorful gopchang I have tasted in a long time. Their beef intestines are incredibly fresh because they are sourced from same-day slaughtered beef, ensuring that signature rich flavor and chewy texture that gopchang lovers adore.
Honestly, I thought I already found my ultimate gopchang spot, but after visiting Dalsoone Gopchang, my list just grew to include another top favorite. Even though I wasn’t particularly hungry when I visited, the combination of expertly prepared beef intestines and their incredible Gopchang Ramen had me clearing the entire table. If you love gopchang or just want to try one of Korea’s hidden culinary gems, this is a must-visit spot in Seoul!

Dalsoone Gopchang is a small and cozy spot with about 7 round tables. It’s always buzzing with regulars and newcomers, so arriving at the right time is key. I visited around 8 PM, and despite the peak dinner rush, I managed to grab a table just as another group was leaving.
This spot does not take reservations and works strictly on a first-come, first-served basis, so I recommend visiting slightly earlier or later than the usual dinner rush.
The space is warm, unpretentious, and perfect for a night of enjoying great food with friends or family. Pro tip: Use the plastic bags provided to store your coats, and don’t forget to wear the apron they offer since gopchang grilling can get a bit greasy!
Menu Overview
The menu at Dalsoone Gopchang is straightforward and focused on quality. You can order specific parts of the gopchang individually or go for their most popular set menu: the Modum Hanpan (Assorted Plate). If you’re in a group of 3 or more, you can upgrade to the Special Modum Hanpan, but this is limited per day, so ordering early is essential.

Appetizers & Side Dishes
Before the main star arrives, you’ll be served a selection of four complimentary sides (banchan) alongside raw beef liver (gan) and tripe sashimi (cheonyeop). The sides included spicy green onion salad, kimchi, and refreshing pickled radish – all fresh and flavorful. I particularly loved the green onion salad, which paired perfectly with the rich gopchang later on.

First up was the famous Gopchang Ramen, and wow, it blew me away! Unlike regular ramen, this dish features a flavorful broth made with a kimchi-based stock and packed with juicy, tender gopchang. The noodles are thin and springy, resembling those in instant “sabal ramen,” but the star here is the broth – it’s rich, slightly spicy, and incredibly satisfying.
Honestly, I thought KRW 10,000 for ramen was steep until I tasted it. I guarantee you, it’s worth every penny, and you’ll want to order this even if you’re not a fan of gopchang!

The assorted gopchang platter arrived pre-grilled to perfection on a hot stone plate. Watching the server finish the cooking process at the table was mesmerizing. They started by grilling the yeomtong (heart) first, which was juicy, tender, and lightly seasoned with salt. It’s the perfect appetizer to get your taste buds ready for what’s next.
As the server continued to grill, the table filled with the mouthwatering aroma of gopchang. The highlight, of course, was the gopchang (small intestines), which were bursting with savory, rich gop (fat) in every bite. The daechang (large intestines) were buttery and crispy on the edges, while the makchang (abomasum) and uchang (tripe) added variety with their chewy texture and mild flavor.

The real magic happens when you pair the grilled gopchang with the spicy green onion salad, pickled radish, or even a dab of wasabi – it cuts through the richness and adds a refreshing balance to each bite.
Another unexpected star was the grilled garlic and potatoes – crispy on the outside, fluffy on the inside, and perfect for dipping in a bit of salt.
Final Thoughts
Dalsoone Gopchang is hands-down one of the best gopchang spots I’ve visited in Seoul. The same-day freshness, generous portions, and incredible flavors make it a standout for anyone craving authentic Korean beef intestines. Add in the unforgettable Gopchang Ramen, and you’ve got yourself a meal worth every minute of the wait.
If you’re in the Sinsa-dong area, love rich and savory flavors, and want a quintessential Korean BBQ experience, Dalsoone Gopchang is a must-try. Whether you’re a gopchang veteran or a first-timer, you’re in for an unforgettable meal.
Pro Tip: Arrive early to avoid waiting in line, and don’t miss out on the Gopchang Ramen! You’ll thank me later.
