The oyster bossam blew me away. The oysters were incredibly fresh, large, and plump, packed with that briny flavor that only comes from the freshest seafood.

The Oyster Sundubu was a surprise—it looked like a mild white broth, but upon arriving, it turned out to be bright red with a rich, spicy flavor. The nuttiness of the sesame oil made it incredibly flavorful. The oysters and tofu combined to create a stew that was comforting and delicious—especially for someone like me who loves tofu!

One of the highlights of the meal was the well-fermented green onion kimchi (pa-kimchi). Despite its strong fermented flavor, it was perfectly balanced and paired beautifully with the bossam. Rolling a piece of pork, oyster, and pa-kimchi into a wrap was an explosion of flavors. It’s no wonder we reached for a glass of soju to toast to the experience!

The Appeal of Seasonal Oysters

Oysters are a true treasure of the sea, especially when they are in season. In Korea, fresh oysters are at their peak during the colder months, making them plump, juicy, and rich in flavor. They offer a taste of the ocean with a briny, slightly sweet profile that pairs perfectly with pork, as seen in oyster bossam.

The restaurant’s commitment to freshness shines through in every bite, making it a go-to spot for anyone who appreciates seasonal seafood. The plumpness of the oysters and their clean taste, free from any off-putting fishy notes, make them a standout. Eating oysters at the right time of year means you’re tasting them at their absolute best.
